You’ll likely be seated next to strangers, as communal dining is part of the experience – a great way to meet fellow travelers or chat with locals.
However, be prepared for a line outside, especially during peak hours. Seeing the long queue might seem discouraging, but it moves surprisingly fast. When we arrived, we found ourselves at the very end of a line that looked like it would take over an hour to clear. To our surprise, we were seated in just 20 minutes – even as a group of four. The hosts manage the crowd efficiently, ensuring a smooth flow of guests in and out of the restaurant.
That said, there is one downside – the hosts do not speak English. If you don’t speak French, expect some confusion. At times, we felt completely ignored as they moved us from one spot to another without explanation. While this might be typical of a busy Parisian restaurant, it did make the experience a bit frustrating at the entrance. Once inside, however, the chaos of the queue gives way to a lively and enjoyable meal.

From the moment we arrived, it was clear that this would not be a polished fine dining experience – but some aspects of the service went beyond “casual” and straight into frustrating.
Feeling Unwelcome at the Entrance
As mentioned earlier, the queue outside Bouillon Chartier moves quickly, but the way the hosts manage it leaves much to be desired. Despite their efficiency, the lack of communication made us feel awkward and ignored. Since they don’t speak English, non-French speakers are often left confused about where to stand, when to move, or if they are even being acknowledged. At times, we were shuffled from one spot to another without explanation, giving us the uncomfortable impression that we were being brushed aside rather than welcomed.

A Waiter with a Chaotic Approach
Once seated, we hoped for a smoother experience, but unfortunately, our waiter seemed to be constantly distracted and forgetful – though we couldn’t tell if it was genuine or part of the restaurant’s old-school “charm.” Bouillon Chartier is famous for its waiters writing down orders directly on the paper table covers, which is a fun and quirky tradition. However, in our case, it led to several mistakes and delays.
- The green beans we ordered arrived only after multiple reminders – long after we had finished our meal.
- A cider that one of us ordered also required several follow-ups and only appeared at the very end of our dining experience.
While the delays were frustrating, one positive aspect was that our waiter spoke English well, which made communication much easier than at the entrance. That’s something we truly appreciated.
A Disturbing Lack of Cleanliness
What really shocked us about Bouillon Chartier was the state of cleanliness, or rather, the lack of it.
- Our table was right next to the waiter’s station, where we could see wrinkled menus stored loosely on oversized paper sheets, dirty glasses, and several empty bottles just sitting around.
- The cutlery was stored in a drawer at this station, all thrown in together, with no effort to keep it sanitary.
- Twice, we received dirty cutlery:
- My knife had dried pasta stuck to it,
- My father’s fork had what looked like dried cabbage or another leftover food residue.
What made the situation worse was how the waiter handled it.
- Before handing out cutlery, he wiped each piece on his apron, as if polishing it. The problem? His apron was visibly dirty – stained with chocolate, wine, and who knows what else.
- When we pointed out that our utensils were still dirty, he silently took them, threw them back into the communal cutlery drawer, and without a word, pulled out another set and placed them on our table. No apology, no concern- just a mechanical switch.
While Bouillon Chartier’s casual and old-fashioned approach might be part of its charm for some visitors, the lack of basic hygiene made our experience uncomfortable and disappointing.
