Christmas fruitcake in an hour

I tried the recipe and changed it a bit when I had to show off with my Christmas baking for the first time, because I was spending Christmas outside my family home. Fruitcake wasn't one of my favorite cakes, but I liked this one a lot, mainly because I had a chance to do it my own way.

Ingredients
  

Dough

  • 250 g white flour in Sweden, I used the usual vetemjöl
  • 250 g butter not salted, in room temperature
  • 5 egg
  • 150 g sugar I took off 30g from the original recipe and it came out perfect
  • ½ tsp baking soda dissolved in a spoon of milk, I used mellanmjölk (1.5%)
  • 300 g dried fruits In any proportion - I mixed 50 g of almond flakes, 50 g of dried figs, 50 g of dried apricots, 50 g of dried cranberries and 100 g of raisins.
  • 2 tbsp potato flour or potato starch

Frosting

  • 200 g powdered sugar sifted into a bowl
  • 1 tbsp lemon juice
  • water to get a proper consistency

Instructions
 

Dough

  • Brush the baking tray with butter and sprinkle with flour, heat the oven to 180°C.
    250 g white flour
  • Prepare nuts and dried fruits - if you use whole almonds, soak and chop them, cut the larger ones into small pieces. Mix everything thoroughly with potato flour - thanks to this, the dried fruit will not fall to the bottom of the dough during baking.
    300 g dried fruits, 2 tbsp potato flour or potato starch
  • Separate the yolks from the whites and beat the whites to a stiff foam.

  • Sift the flour into a bowl.

  • Mix the soft butter with a sugar until smooth.
    150 g sugar, 250 g butter
  • Add one yolk at the time to the mixture. After adding each, mix the mass for a long time with a mixer at high speed.

  • Gradually add the sifted flour, mixing each portion with a mixer until the ingredients are combined.

  • Slowly add whipped whites to the mixture. Stir them gently with a wooden spoon or spatula.

  • Add baking soda mixed in milk and mix with the mass.
    ½ tsp baking soda
  • At the end, pour the prepared dried fruit and nuts into the mass and mix thoroughly.

  • Pour the dough into the baking tin.
  • Bake for 60 minutes. After approx. 30 minutes, you can cut the dough in the center to form an even crack throughout the length of the dough.
  • After baking, let it dry in the pan. Put on a wire rack and wait until it is completely cool.

Frosting

  • Sift the powdered sugar into a bowl.
    200 g powdered sugar
  • Add lemon juice and mix intensively. If frosting is too thick, add water slowly until you get the consistency you want.
    1 tbsp lemon juice, water
  • Pour the frosting on top of the cake. You can sprinkle with dried fruit or sugar decorations. Leave for few hours until the frosting will set.
