Prepare nuts and dried fruits - if you use whole almonds, soak and chop them, cut the larger ones into small pieces. Mix everything thoroughly with potato flour - thanks to this, the dried fruit will not fall to the bottom of the dough during baking.
300 g dried fruits, 2 tbsp potato flour or potato starch
Separate the yolks from the whites and beat the whites to a stiff foam.

Sift the flour into a bowl.

Mix the soft butter with a sugar until smooth.

Add one yolk at the time to the mixture. After adding each, mix the mass for a long time with a mixer at high speed.

Gradually add the sifted flour, mixing each portion with a mixer until the ingredients are combined.

Slowly add whipped whites to the mixture. Stir them gently with a wooden spoon or spatula.

Add baking soda mixed in milk and mix with the mass.

At the end, pour the prepared dried fruit and nuts into the mass and mix thoroughly.

Pour the dough into the baking tin.
Bake for 60 minutes. After approx. 30 minutes, you can cut the dough in the center to form an even crack throughout the length of the dough.
After baking, let it dry in the pan. Put on a wire rack and wait until it is completely cool.
